The Experiment

Today is day one of my one month experiment of being a vegetarian. Don't ask me why, I just wanted to try something new and see if I could actually last a whole month without eating meat.
I rounded up some recipes online and from some of my cookbooks and made a menu for this weeks dinners. I think I'll do fine when I am at home and can actually cook, but lunches will be hard. I only get a 1/2 hour break at work so fast and easy is what I need. I guess if I really wanted to I could make my lunch the night before... but I probably wont.
Anyways, here is a list of the scrumptious veggie meals I will be having this week:

Spinach Stuffed Mushrooms
Zucchini Casserole
Broccoli Rice Dinner
Loaded Potatoes - no bacon bits
Spaghetti Alfredo
and Veggie Lasagna

I think Greg's up for most of it, but he said I can make the stuffed mushrooms on Wednesday when he is on the camp out with the young men :-)

Let me know how the zuch. casserole is! I had butternut squash ravioli the other day and it was scrumptious <-(?)

And ever since I've dropped the 'e', it is alot easier for everyone to pronounce. :D

I'm always tempted to go vegetarian for a while since I don't really like meat. Then I remember my husband would starve to death since I cook for him, and he lives off meat. Maybe I'll just have to start cooking separate dinners. What are you gonna do for Greg?

If I were making the stuffed mushrooms, I'd have to make it on a night that R would be gone too! I'll come eat them with you!

I don't think Jack and I could go that long without meat, especially in the summer...he likes to BBQ too much! It's fun to see what you guys are up to and we will post pictures of our little Charlie as soon as he gets here:)
